If you’ve not yet tried your hand at a Chef Cynthia Louise recipe, you’re in for a treat. The real food chef will be a regular contributor to Eco Beauty Editor, offering up some of the most tempting and tasty dishes on the planet.
What better place to start than with an all-time fave? Whole wheat pancakes are a brekky best and these ones will be sure to knock your slippers off. Once you’ve made them, please share your review in the comments. We know you’re gonna love ’em!
1/2 cup cashews
300 mls water
2 tablespoons coconut oil
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/4 teaspoon vanilla seeds
1 tablespoon coconut sugar
Pinch of salt
1. In a blender on high speed combine the cashews and water. Blend for a minute, then turn down to low speed. Add the egg and coconut oil and blend briefly for about 5 seconds.
2. In a bowl combine the flour, salt, baking powder, vanilla seeds, and coconut sugar, and mix well. NOW combine the wet mix with the dry mix; with a whisk mix these together so it forms a nice thick batter.
3. To make the pancakes heat a medium size pan on high/medium heat, add a little coconut oil, and ladle 1/3 cup of batter at a time into the pan.
4. Cook for a minute or until the surface is pitted with small holes and has began to set. Use a spatula to remove the pancakes.
Makes 7 pancakes.
