Chef Cynthia Louise Whole Wheat Pancakes

Ingredients

1/2 cup cashews

300 mls water

1 egg

2 tablespoons coconut oil

1 1/2 cups whole wheat flour

1 teaspoon baking powder

1/4 teaspoon vanilla seeds

1 tablespoon coconut sugar

Pinch of salt

Method

1. In a blender on high speed combine the cashews and water. Blend for a minute, then turn down to low speed. Add the egg and coconut oil and blend briefly for about 5 seconds.

2. In a bowl combine the flour, salt, baking powder, vanilla seeds, and coconut sugar, and mix well. NOW combine the wet mix with the dry mix; with a whisk mix these together so it forms a nice thick batter.

3. To make the pancakes heat a medium size pan on high/medium heat, add a little coconut oil, and ladle 1/3 cup of batter at a time into the pan.

4. Cook for a minute or until the surface is pitted with small holes and has began to set. Use a spatula to remove the pancakes.

Servings

Makes 7 pancakes.
