Recipe: Chef Cynthia’s Raw Avocado Pie

February 18, 2016

The humble avocado. They are one of the most beautifying foods on the planet, thanks to their free-radical destroying antioxidants and essential fatty acids, which help keep skin plump and smooth.

Chef Cynthia Louise has outdone herself (again) with this taste explosion of a recipe. And did we mention healthy? It’s also so good for you—and the kids will love it!

If you make Chef’s recipe, head over to the Facebook page to share your creation. We’ll gift an e-recipe book to five lucky culinary creators at the end of February!

  • 1 cup psyllium husk
  • 1 cup of desiccated coconut
  • 1 cup of soaked cashews
  • 10 dates
  • pinch of salt

Combine all ingredients into a food processor until sticky. Press into seven tart tins, or one medium tart tin.

For the Filling

  • 4 avocados
  • 5 tbsp of maple syrup (add a little more if not sweet enough)
  • 3 tbsp raw cacao powder
  • 60 grams of cacao butter, melted
  • pinch of salt

Add the filling ingredients to a blender and blend until completely smooth. Then, add the filling to your tart shell and place it in the fridge until it sets. It should take about 2 hours.

Making pies are so simple it’s ridiculous. this particular sweet avocado pie, I have for breakfast or dessert. Every time I eat this I feel like it’s so naughty — but clearly it’s not! It serves every part of your organs in such a profound way! This is what nature requires from you.
